Making fajitas on the Blackstone is one of my favorite things to make. We have made steak fajitas and chicken fajitas and they always turn our perfectly cook.

The sizzling shrimp, cooked with the vegetables and tossed with the fajita seasoning makes for the perfect weeknight meal. These Shrimp Fajitas can be cooked on your griddle or a cast iron skillet.

We love cooking on the large cooking surface because I can easily cook everything at once including heating the tortilla. This simple recipe is delicious and made with easy ingredients.

What are Fajitas?

Fajitas are referred to as thin strips of meat. They are a popular Tex-Mex dish and include steak, chicken and shrimp. Fajitas are cooked on a cast iron griddle with the protein, onions and peppers.

Traditionally fajitas come sizzling hot on a cast iron dish served at your favorite Mexican Restaurant. You wrap your fajita meat with the cooked peppers and onions in a corn or flour tortilla.

Ingredients:

  • Large Raw Shrimp (washed, peeled, deveined and tails removed)
  • Taco Seasoning
  • Avocado Oil
  • Yellow Bell Pepper
  • Red Bell Pepper
  • Yellow Onion
  • Flour Tortillas

How to Make Shrimp Fajitas on Blackstone Griddle:

  • Step 1 – Slice the peppers and onions into thin slices.

  • Step 2 – Preheat the Blackstone grill over medium high heat (approximately 400 degrees F).
  • Step 3 – Drizzle the avocado oil or olive oil onto the grill and spread it out with a spatula.
  • Step 4 – Place the bell peppers and onions on one side of the grill and season it with half of the taco seasoning.
  • Step 5 – Toss the vegetables with the seasoning to thoroughly coat. Let the peppers and onions cook for 1-2 minutes. Flip them to cook on the other side of the veggies for 1-2 minutes.
  • Step 6 – Add the shrimp to the other side of the grill once the vegetables are approximately halfway through their cook time. Season the shrimp with the remaining taco seasoning and toss it to coat it in the seasoning.

  • Step 7 – Cook the shrimp for 2-3 minutes until the shrimp is pink. Flipping approximately every minute.
  • Step 8 – Toss the shrimp with the peppers and onions. Then remove from the Blackstone grill.
  • Step 9 – Clean any debris off the grill. Place the flour tortillas on the grill and cook for 1 minute per side to warm them through.
  • Step 10 – Remove from the grill. Assemble your shrimp fajitas with your favorite toppings and enjoy. We like to add fresh lime juice, sour cream and salsa.

How to Season Shrimp Fajitas:

When we make Shrimp Fajitas, we use Taco Seasoning and salt and pepper. This seasoning is easy to make homemade or your can easily buy the packet taco seasoning.

We love to make our own seasoning so we can adjust the ingredients. The seasoning blends that you buy at the store have additional ingredients that are not needed.

What is the Best Shrimp for Fajitas:

When we make Blackstone Shrimp Fajita we like to use the large, jumbo or colossal shrimp. We buy the shrimp that is already peeled and deveined.

But you can grill shrimp with the peel on. I like to keep things easy, so I look for the shrimp that is already peeled.

We prefer to buy shrimp that is uncooked and that is what this recipe calls for. But you can use the precooked shrimp but it does shrink in size when grilled.
