A 20 minute no-brainer! Moist salmon, crunchy cucumbers and that delicious brown butter/lemon sauce. It's going to be a regular. Presentation looks a little bland so suggest brightening up with some asparagus spears or as we did last night - lightly steamed edamame beans.

This recipe sounded odd, but it turned out to be super-flavorful. I used the small Japanese cucumbers instead of Kirbys, and parsley instead of dill or cilantro.
Mary Ellen
Delicious, easy recipe. Used the English cucumber I had on hand.

This is one of my favorite salmon recipes. I have made yet over and over, and it is always great. The combination of ingredients seems a little odd, but we love the results.

Great, simple recipe. Add a splash of white wine with the lemon juice and reduce for added flavor.

So this is very good but the timings are a bit off. Add the cucumbers when there are only about 2 minutes left to cook the salmon. Otherwise, the cukes will not retain any bite. Also, the fish will be too well-done unless you reduce the total cooking time by about 2-3 minutes. Very tasty though!

If I had just looked @ the recipe I would never have made it but the comments were so positive I gave it a try. It turned out to be fabulous & I will make it again :).

Delicious! Cut each filet in half. Use biggest skillet. Follow step 1. Cook 3 min, flip fish, add garlic, cook 3 more min. Add cucumber cubes and pinch of salt; cook 2-4 minutes or until done. (That way, the cakes stay crunchier. )Transfer salmon to plates. Stir dill (or cilantro or parsley) and lemon juice into cucumbers in pan. Taste! Add more s&p and lemon juice; maybe a splash of white wine. Serve cucumber & butter lemon sauce over fish.

Even the cooking times were perfect, this recipe is easy, quick, accurate, and delicious. We made one change which turned out very well: we added a tablespoon of capers to the dill in Step #.

Delicious recipe, I have made it over and over and my guests always enjoy it, the cooked cucumbers are not a very common dish and always turn out to be a conversation piece.

This is a really good, healthy and easy recipe that lends itself to lots of creative changes ...or not! I love browned butter and keep some in my refridge all the time (my Hungarian background is showing). This is a keeper!

I’m a salmon snob from Seattle and don’t often add much to salmon if it’s a good cut of fish other than S&P. But with so many positive reviews I was intrigued and had to cook this! I am so glad I did. I only used about half the the cucumber but the same amount of garlic. I think I would add tiny diced red pepper for more color next time, but other than that this was a great addition to my normal plain seared recipe.

Made this with my 12 year old tonight. It was fabulous and easy enough for him to make.

This is a variation of a Marion Cunningham recipe that I have cooked for years. Marion added capers, a wonderful addition.
Mike
Super delicious. Recipe was easy. The sauteed cukes turned into lemon flavor bombs on top of the salmon. I loved it.
Heidi
I am the outlier, I found the cucumbers weird and off-putting. Not a repeat in my house.
Shannon
This is amazing! Tasty and simple, this updates salmon to a dinner party worthy level.

Boy, it would be helpful to know more about the quantity of cucumber. I just googled to find out how much a Kirby cucumber ways - anywhere between 2 oz and half a pound!
MG
Wonderful flavors. Tossed in some ricotta ravioli to the sauce mixture at the end to make a complete dish.

Made this for 2nd time 3/2/22. Again good. Cucumbers end up tasting like a crunchy vegetable. This was with coho salmon - a little dry
Anita
The only variation I made was using dried rather than fresh dill. This was so good and so simple! We had it with Julie Moskin (sp ??)'s beet salad with goat cheese and with baked and seasoned lima beans. I will definitely be making this again!

When we were eating dinner we thought the same thing - capers would be a great addition!!

Made this for the first time and will make it again. This was delish! Served it with roasted asparagus and new potatoes and it was a beautiful meal.

Wanted to love this but it just didn't do it for me. Rather bland.
Karl
I agree that it was bland. I added capers and that made it better.

Awesome. Followed the recipe exactly. Nice crust on the salmon from cooking skin up to start with. Took about 10 minutes start to finish.
Madeline
A great recipe, although I agree with a slightly shorter cooking time for the salmon. Although my husband thought it was fine, I thought it was gone a bit too long. Seasoned with Lemon Flake Salt from The Meadow in Portland OR — perfect!!!
Quarantine Cooking at its best!
We made this last night and everyone loved it. Cucumbers when cooked added wonderful, surprising textures and flavors. We´ll make it again!
the_beezelet
Fantastic recipe, although we reduce the cooking by 1 minute for each step as prefer our fish less cooked. Otherwise, it’s great!

This was really good. My family enjoyed the cucumbers. I'll probably try it with a little bit less butter next time.
JoAnn
Serve with Greek yogurt on the side for some nice acidity!
